Have you got a database script or an agent running on your environment that is setting the profile document setting for the mail file owner in one or the other of your domains
e.g. in db.getprofiledocument("CalendarProfile")
If not you could write one I suppose but better to find what is automatically setting the owner back first- or you will have your system fighting itself.
